Ingredients:
- 4 King Prawns
- Coconut milk
- 2 Rodo (Scotch Bonnet or Habanero peppers)
- Lemongrass
- 4 tablespoons of fish sauce
- Basil
- Curry Powder
- A clove of garlic
- Olive oil
The process:
Add garlic to a frypan of olive oil. Fry the prawn in the oil until it turns slightly pink, not too pink, no one likes rubbery prawn. Then add all the other ingredients. Let it simmer for about 10 minutes. Serve with rice. I prefer basmati.
